A Little Chocolate Is Good for the Soul Dark Chocolate is chock- full of healthful chemicals known as flavonoids which act as antioxidants. Antioxidants protect the body from aging caused by free radicals, which can lead to the onset of diseases such as cancer and heart disease. Antioxidants also enhance the immune system as well as lead to an overall feeling of well-being. According to research studies, cocoa powder contains the highest amount of antioxidants out of all of the chocolate products, followed by dark chocolate and then milk chocolate. Cocoa is also a magnesium-rich natural source; Magnesium has been shown by scientists to be beneficial for cardiovascular health and hypertension. Research also indicates that chocolate contains a relatively high quality and quantity of antioxidants compared to other foods such as strawberries, red wines, raisins, pinto beans, and other plant products. For example, dark chocolate has been found to contain about 8 times the amount of poly-phenol antioxidants as strawberries, which are already considered an antioxidant-rich fruit. The amount of polyphenols in milk chocolate is about 5 times the amount found in 5 servings of fruits and vegetables. A small bar of dark chocolate everyday is good for the heart and cardiovascular system and may improve insulin resistance. Moderate amounts of dark chocolate have been found to lower high blood pressure. Dark Chocolate has also been shown to reduce bad cholesterol (LDL cholesterol) by up to 10 %. Darker chocolates tend to be more healthful than the average commercially produced chocolate which contains about 40 percent cocoa.

Gourmet Teas
Oolong Teas Oolong teas are one of four types of nonherbal teas (black, oolong, green, and white) and are partially oxidized leaves of the camilla sinensis. Oolong teas are in between green and black teas in terms of processing or oxidation of their leaves. Processing teas, is the art of tea and is the cause of the various nuances in flavor and aroma of teas. Processing of teas is the taking of the green leaf of teas, and deciding how much oxidation should be accorded to the leaves, |

before the leaves are dried out. For oolong teas, only partial oxidation is required. Although a combination of black and green teas, the taste and aroma of oolong teas share little resemblance between the two spectrums of tea. Oolong teas have distinctive flavors and aromas not found in other types of teas due to the processing techniques and plant varietals unique to this category of tea. There are hundreds of types of oolong teas that are classified according to the tea bush varietal, the season of harvest and the cultivation region. Oolong teas almost have no trace of bitterness and generally have a stronger aroma than almost any black or green tea. Like dark chocolate, oolong tea is rich in antioxidants known as poly phenols, which are good for cardiovascular health and an overall sense of well being. Scientific research has shown that poly phenols produce the wonderful flavors unique to oolong teas. Not only does oolong tea taste great, it has numerous health benefits, one of which is weight loss. Oolong teas are extremely flavorful and highly aromatic. Green Teas Green tea is the true tea leaf of camilla sinensis that has undergone minimal oxidation and is ubiquitous in Japan and also found in China. Scientists found that green tea may prevent the oxidation of LDL cholesterol (the "bad" type), which, in turn, can reduce the buildup of plaque in arteries. Green tea, like oolong tea and dark chocolate, is rich in poly-phenols. Green tea is particularly rich in the poly-phenol antioxidant, epigallocatechin gallate, which is credited with inhibiting cancer. What sets green teas apart from other teas, is the manner in which it is processed. Green tea leaves are steamed, which prevents its poly-phenol, epigallocatechin gallate, from being oxidized. White Teas White tea is similar to green tea in that it has undergone little processing. It is a unique and rare form of tea, that is high in antioxidants and low in caffeine. White tea has the most antioxidants because its' buds are not subject to fermentation or steaming while being dried. White teas have a subtle flavor. There are many varieties of white teas with such names such as peony or silver needle. Black teas Black tea is a dark tea that has been prepared from fully fermented leaves before these leaves were dried and is the most common tea consumed worldwide.
